Baking cupcakes.

Last week Lydia had a sudden request to bake cupcakes.  Of course this pregnant body agreed with her that baking cupcakes sounded like an excellent idea.  I wish we could say we made the cake batter from scratch, but it was spring funfetti boxed cake mix.  And I didn’t make any healthy substitutions either.  Just plain old bad for you cake mix.  And it was good.

I have been slowly but surely learning to be a hands off mother when it comes to activities.  The poor girl has no siblings to distract me yet so when it comes to cooking, crafts, and the such I am right there making sure the messes aren’t too big and that the craft comes out looking decent or how it’s “supposed” to look.  When am I going to learn?  Lydia needs hands on experience to learn and I take that away from her.  This time I really tried to not care about messes or getting the batter perfectly in those baking cups.  The only lesson learned here today was to not let a three year old try to crack eggs just yet.  I let her lick probably way too much batter for all of her hard work.  But don’t worry, no one got sick here!

And guess what???!!!! Gregory is taking Lydia and I to St. George for the weekend! Could not be more excited to soak up the sun. It’s supposed to be in the 70’s.  Heavenly weather here we come.

Banana ice cream.

You must try banana ice cream. I have seen this simple idea floating around the internet for a long time and now with my blend tec blender I could finally do it! Just freeze a couple of bananas and then pop them in your food processor or blender(if it can puree) and your frozen bananas look and have the consistency just like ice cream. So yummy.  Lydia and I love to eat it with a spoonful of peanut butter too.  Such a great way to curb my sweet tooth when I have that I need a treat right now feeling.  Obviously, if you don’t like bananas this isn’t for you, but if you do you are in luck.  It’s delicious!  Just in time for summer.

Blend it up.

Over the weekend Gregory and I made one of our dream purchases.

Yes, a Blendtec blender.  We dream big.  We have been dreaming and oogling over them every time we go to Costco.  Thanks to our rewards from our American Express, this purchase was finally made possible and affordable.  We brought it home Friday evening and have already made smoothies, milkshakes, applesauce, and protein shakes since them.  I thought this would motivate me to eat healthier but I put vanilla ice cream(at least it was low fat ice cream), some milk, and frozen homemade chocolate chip cookies together and my mind was blown.  I might have made that milkshake on Friday and Saturday night.  It was gooooooooood.  Next up on my list: a bunch of green smoothies, pesto, and hummus.  Oh and peanut butter!  Anybody else have any recommendations for me?

I have also decided Monday’s are crazy hair days.

Pumpkin spice whoopies.

I made these pumpkin spice whoopies for a Halloween party and they were quite the hit. That cream cheese filling makes for awesome dip with apples if you have any left over too. Definitely a recipe I will be using every fall time.  And I love that every time I make these I can say I am making “whoopie.”  That’s right.  Hi, I am Kara and I am immature with my jokes.  Nice to meet you.

Subzero.

We Simmons love our ice cream. Especially from a little shop called Subzero off of Lehi mainstreet. It’s our favorite. We use any excuse to go get ice cream. Last week I gave the excuse that it was such a hot day we had to celebrate!
Please go fellow Utah county people so we can keep this shop alive! I don’t know what we will do without it if it does go away.


Brownie overload.

I made these brownies last weekend when we had some friends over. It was a brownie/chocolate chip cookie overload and it was so so good. I suggest trying them out for yourself and just be prepared to feel like you gained about ten pounds when you eat one.  Find the recipe here.

Wheat tortillas.

I made some yummy burritos on Friday night and had a little extra time to kill before Greg got home from work so I decided to make some wheat tortillas.  This was my second attempt and the first attempt of tortillas didn’t turn out as well as I had wanted.

It is determined I need a tortilla press.  It took me twice as long to roll out the darn things than to make the dough.  A great mother’s day gift don’t you think Greg?  Or I would like to become rich enough to afford a endless supply of Cafe Rio wheat tortillas please.
